Vegan Stuffed Aubergines

I was looking for Aubergine Recipe and my good friend, Silviu, gave me a site where to look for a good one. I had a quick look at the ingredients and instruction and proceeded to make it my way. Here’s what I came up with.

Ingredients:

2 Large Aubergines
200G Mushrooms
A Handful of Broad beans, peeled
1 Onion

Seasonings:
Dash of Garlic Powder
1 Tbsp Nutritional Yeast Extract
1 Tbsp Tomato Puree
1 Tbsp Extra Virgin Olive Oil
Unrefined Seasalt to taste

Preparation

Cut aubergines in half and scoop the middle part leaving about 1 cm around the edges.
Brush with olive oil and set aside the outer part of the Aubergines.
Stir-fry the onions and beans, mushrooms, and the middle part of the aubergines. Add the seasonings. Continue cooking until every fiber is softened.
Fill the aubergines with this stir-fried mix and bake at gas 5 until the aubergines are soft.

Any suggestion on how to improve this recipe is most welcome.
