I picked some organic rockets from our allotment not knowing what to do with them exactly.  So I searched for Rocket Recipes and I found one from Jamie Oliver but his was Spaghetti with Shrimp and Rockets. Well, I don’t eat seafood but I have learned to substitute fish and meat with vegan products. Luckily I had made some seitan for barbecues and there were still some more left. They tasted like chicken nuggets although it was pure vegan. I wasn’t really chuffed about the chicken-like taste but I was impressed at how good they were. Thus the Spaghetti with Rocket and Vegan Chicken Nuggets.


350g Spaghetti
1 Aubergine, Optional
1 Cup Vegan Chicken Nuggets
2 Tbsp Red Pesto
A bunch of Organic Rocket
1 or 2 Garlic Cloves
1 Tbsp Extra Virgin Olive Oil
1 tsp Soy Sauce
1/5 tsp Cider Vinegar

Method of Preparation

Cut the aubergine in wedges.
Saute garlic and add the aubergines and the vegan chicken nuggets. Add half cup of water and 1 tsp of soy sauce.
Cover the pan and let cook turning every 2 minutes or so.
When the aubergine is cooked, add the red pesto and mix well.
Mix sauce with the pasta and add in the rockets.
Garnish with vegan cheese if you’ve got any.  Otherwise, it’s already good as it is.
