
For me the best way to eat plantain is by roasting it. Its natural sugar content tastes so lovely. No need to add anything else. It’s so good just on its own.
When buying plantains, pick the ones that are still hard because the overly matured ones gets too soft when cooked and they tend to become more acidic.
Just cut them up and pop in the oven. Good for desserts or with a cup of tea.
