It transports me back to my childhood days when Macdonalds and Pizza Hut weren’t around yet–at least where I lived-that is. On Sabbath afternoons when my mother thinks we could use some nice snack and my cousins were around, she’d make the simplest but delightful merienda — Boiled Cassava with coconut milk.

One coconut grated in a traditional grater where you sit on a stool and then extract the milk. Fresh coconut milk, you can’t get any better than that.

The cassava is then boiled with it until the coconut milk turns into oil. Then we’d add sugar or salt, whatever we fancied.

Since I can’t do the same exact thing, I use coconut milk in tin which is not as good as the fresh one but it’ll do.

There is no recipe to follow but I just follow my gut.

2 Foot-long Cassava
1/2 Coconut Milk
Salt to taste
1L Water or more

Put them all together in a pot and cook until it’s almost dry.  Poke with fork and if it’s not ery soft add more water and continue cooking until dry but not burnt like mine. LOL! :D

  1. I love cassave especially that with cheese on top…I seldom find cassave where I am now but I’d definitely try this when I do. Thanks for sharing (and visiting).
